Does a home aging barrel need prep before filling?

Yes. Fill it with water and let it sit until the wood swells and stops weeping. Skipping this step is the most common cause of leaks in a new barrel.

• Drain the water and fill it with spirit right away so the oak stays tight.
• Check the listing to see whether a stand, spigot or bung is included.
• Look in the description for a char or toast level before you buy.
• Small barrels age fast, so plan to taste often.
